Berry Pie for the Birthday Boy

So the hubs birthday is on Christmas... so in our house, it's really more Birthmas than Christmas.

So each year he gets the choice of what we have for Birthday Dinner and Dessert.

This year he requested a cherry or blueberry pie. Um, hubby, those are way out of season.

But I was steadfast and found a great recipe for a cherry blueberry pie on all recipes that I made him and it was incredibly good and so easy!

We decided this will most certainly get added to the pie baking rotation in the house, and he feels it may be his new birthday request each year.

Seriously people this recipe can't get any easier. I'm posting it how I made it because I did make some alterations from the recipe on the website.

Birthday Boy Cherry Blueberry Pie

1 box Pilsbury pie crust rolls - you will use both. Yes you can make your own, but I don't have time for that!
1 can low sugar cherry pie filling
2 cups frozen blueberries defrosted
3/4 cup sugar
1 tsp. cinnamon
1/4 cup flour
1 egg beaten

Roll out pie crust bottom and place in pie plate.

Mix together pie filling, blueberries, sugar, cinnamon and flour. Do make sure you put the flour in, it will help thicken the filling and trust me, it didn't run one bit! And the cinnamon adds a nice background flavor. Place filling mix in to bottom crust.

Roll out top crust and place on top of filling - you can do the full piece of crust or cut for strips, whatever you like. Brush egg wash on top of the pie dough for a crisp top and sprinkle with some sugar for some shimmer.

Place on cookie sheet and bake in the oven at 375 for 1 hour.
