For Labor Day this year, we cooked up some chicken lobsters the night before and removed all of the meat and popped it in the fridge.
For lunch the next day, we ended the summer in RI style by enjoying lobster rolls at home on the hubs homemade sourdough bread.
Lobster and light mayo and voila!
DELICIOUS!
