I have tasted heaven...

And I can't stop dreaming about the creamy, light goodness that is homemade hollandaise sauce.

But let me start at the beginning.

I recently watched Julie & Julia - but only made it half way through to where the rental DVD started skipping.

So we returned that and got the movie for ourselves.

And I made the hubs watch it with me again - since I figured, come on it's food, I'm loving it, he'll love it.

So we watched it Saturday night with our mouths watering.

Sunday, we popped some artichokes in the steamer for lunch that I had in the fridge. But I was so inspired by Julie's first recipe she makes - artichokes with hollandaise - that I thought, I could do that.

So I found a recipe in my Good Housekeeping Cook Book, prayed to the God of non-scrambling eggs - and set forth on my journey to making my first hollandaise from scratch.

Oh creamy, heavenly, yellow goodness - where have you been all my life. All I've ever known was the packet of yellow powder you add water to. How could I have been missing out on one of life's greatest pleasures??

I don't know how I'll ever partake in artichoke without you again! But for my heart health - I will try to and just indulge in you on rare occasions.

The recipe was easier than the one I think she followed in the movie and seems pretty full proof to me.

Hollandaise Sauce
3 egg yolks
2 T lemon Juice
1/4 cup water
1 stick of butter cut in to pieces.

In a small, non-reactive pot, whisk together the egg yolks, water and lemon juice. Once combined place on medium low heat and stir with a wooden spoon constantly for about 6-8 minutes, until the sides start to get lightly bubbly. When this happens,turn the burner to low, switch back to your whisk and whisk in one piece of the butter at a time until each piece is incorporated. add a touch of salt if you think it needs it. Mine did not.

It makes 1 cup of the sauce - and YES I was a freak and put it in my recipe builder on spark people and got the calories - 244 calories for 1/4 of a cup. That coupled with the 76 calorie artichoke was more than worth it - we won't talk fat!!
